ST. GEORGE — It’s time for a new episode of “What’s on the Menu,” which means another trip to Pieology Pizzeria. Pieology is all about options, and they make it easy to create your perfect pizza. Host Sheldon Demke is pretty much a whiz at the process by now.

This time around, he invited Pieology’s general manager, Dreo Premo, to take a break behind the counter and share a bit to eat with him. After all, nobody knows the place better.

Premo’s go-to is the cauliflower crust. Gluten-free and full of veggies. It’s a delicious and nutritious option you can get with any pizza. She loaded hers with Alfredo sauce, buffalo sauce, spinach, a light sprinkle of mozzarella cheese, roasted red peppers, jalapeños, meatballs and salami. Top that with salt and pepper plus red pepper, and wow!

Demke also opted for the cauliflower crust, but with garlic spread, marinara sauce and mozzarella. Then, he built his own fantastical creation: the pepper pizza. Bell peppers, banana peppers, roasted red peppers, jalapeños and pepperoni. Then he sprinkled black and red pepper on top.

“I literally invented this just now,” he said. “I’m pretty sure I’m patenting this one.”

The only thing tastier is Pieology’s scrumptious Ooey Gooey Cheese Bread. It’s a pizza made from pie-rise thick crust with heaps of parmesan and mozzarella.

“(It) fluffs up, it cheeses, it crisps, it bubbles and boils, and you dip it in the house-made red sauce,” Premo said. “It is fantastic.”

Pieology is located in Red Rock Commons, making it the perfect spot to refuel on your lunch break or after a busy day of shopping. Stop by and get a taste!
