ST. GEORGE — Southern Utah is overflowing with great places to eat, and in the spirit of the Southwest, the community is no stranger to delicious Mexican food.

“What’s on the Menu” host Sheldon Demke was in the mood for tacos, so he took Mauri Tullis and LaRae Nelson with Canyon Media’s fabulous radio crew to check out the menu at Tacos Plaza. Located in The Shoppes at Zion, Tacos Plaza is a family-owned Mexican eatery with authentic recipes and fresh ingredients.

Owner Jon Lopez and his wife, Keeana, met and fell in love while working in a kitchen, and they’ve been creating mind-blowing food ever since. From the meat they have delivered three times weekly to the chiles they prepare every morning, Lopez said they take pride in freshness and keep their menu small in order to focus on quality.

The group first tried the quesabirria, tender stewed meat wrapped in a tortilla loaded with gooey melted cheese plus a cup of broth for easy dipping. Think of a French dip, only with Mexican flavors.

“It is literally the reason I come every single week,” Nelson said. “It is my go-to.”

They also dug into a family-sized smothered carnitas burrito. Generous portions of beans and rice with fresh carnitas (pulled pork), onions, cheese and cilantro, all smothered in green salsa.

Demke can never say no to nachos, but he wasn’t ready for the heaping platter of deliciousness he received at Tacos Plaza. Homemade chips made fresh every day, cheese, beans, loads of carne asada, onions, cilantro and a big helping of guacamole.

“What can I say? I’m blown away by Tacos Plaza,” he said. “I’m going to be thinking about this day for the rest of my life.”
