FEATURE — Customers who dine at Anasazi Steakhouse in St. George should prepare themselves for a sensory overload of the best kind.

“We like to bring a little bit of passion into what we do, with the great concept of cooking on a stone,” said Gary Smith, the restaurant’s general manager and executive chef. “We like to keep things social. We think that having the stone and being able to course out our food gives it the element of just that — that expertise and things that people aren’t used to, providing great cuts, fresh ingredients and the time to talk and share good experiences over great food.”

According to the restaurant’s website, the cooking stones are slabs of volcanic rock heated in a special oven for 6-8 hours and then placed onto stoneware plates specially-designed to withstand the intense heat.

Smith, who has been with Anasazi for the past six years, said the establishment’s meat is sourced from two different places – one in Kanab and one in Las Vegas.

“We are getting cuts of meat four times a week,” Smith said. “When you order a steak, it has been cut the day before and brought to your table the day after. So everything is two days at the latest.”

To complement its signature steaks, Anasazi’s menu features a variety of delicious appetizers, including the popular California Dreaming cheese fondue and a Mediterranean style bruschetta with a cilantro pesto base, served with feta cheese. Another tasty option is the pan-seared Ahi Appetizer, featuring sun-dried tomatoes and cilantro and infused with a garlic chili oil.

“I want you to come in and enjoy good food at a reasonable price and be prepared to have your senses blown away, because we will give you that here at Anasazi,” Smith said.

“I love to watch people come in and get excited about what we do,” Smith added. “I love everybody that works with me…and I always say ‘works with me.’ I’m not above anybody in this place. We all work together to give people the great experiences that I believe that we’re giving here.”
